Taste the Happy, Michael!

I love to cook but during the week, it's easy to forget that I do. After a long day of work, it can be daunting to imagine all the separate ingredients in my fridge ever making their way into a healthy and delicious meal.

Fortunately I have found inspiration for those nights in a website called Delicious Wisdom. It was launched in February 2008 by Nicole deVries, a “certified Holistic Health Counselor and self-taught natural foods chef”.

After letting the 150 recipes steep in my mind, I decided to start by making Jerk Salmon and Sweet Potato and Whole Wheat Gnocchi and I hoped that the meal would taste as great as it sounds. The recipes were easy to follow and the results were absolutely delicious. The spices in the Jerk Salmon were so aromatic that Cooper smelled like nutmeg for the next few days...yum! And the sense of accomplishment I felt for making my own gnocchi was pretty amazing. Joe said that he could taste the love and happiness that went into the meal. If that simple pleasure isn't something to aspire to, I'm not sure what is.

Friday evening, with the freakish rain, hail and thunderstorm, was a perfect pasta night, so I went back to the website and dug up Penne with Dairy-Free Vodka Sauce. We couldn’t include the half-cup of crushed cashews due to my nut allergy and that was a shame because I’m curious to see what the nuts would add to the dish. The penne was really good and, though it didn’t seem like it should, it matched really nicely with the Boozehound Cinephile’s gin gimlets.

To cap off a week of creativity in the kitchen, Joe and I were treated to dinner last night at S & B’s house. S spent the day preparing a Moroccan meal with some recipes coming from Epicurious.com, and her hard work was well appreciated. We enjoyed excellent company, a myriad of white wines and, among other things: salad with grapefruit, olives and avocado, Moroccan chicken pie, and fig & raspberry galette. It was an absolutely wonderful way to end the week.
